Can you smoke a turkey? Yes. Should you? Yes again.

We’ve had roasted turkey, we’ve had turkey grilled on the barbecue, we’ve even had deep-fried turkey. But what we really love (as you might guess) is smoked turkey. It’s not something just for experts, and you probably don’t have to worry about burning your house down like you do with frying one, either. It’s going to take a long time—about 30 minutes a pound. And it’s totally going to be worth it.

A few quick notes: You don’t want to put stuffing in the turkey, because by the time the stuffing is done, the turkey likely will be overcooked. Also, it’s a good idea to brine it before and baste it during. Finally, make sure to let it rest! It’s going to be tempting, but don’t dig in right after you take it off the smoker.
